24V Pulse input

I have a IFM SM7000 flow meter that is set to nPn pulse output for measuring the flow unit.

It is a 24V unit (both the F16 and the flow meter)

What input on the F16 can I wire this to in order to count the pulses..... Will the standard digital inputs work?

you can connect with free GPIO port, config by ESPHome. not use by digital input, because digital input port with opto-coupler on PCB.
free GPIO are connect with ESP32S3 module pin directly.

I just want to understand, why should I not use the digital input port if it is opto-isolated???? Wouldnt that be safer/better becasue it is opto-isolated?

i don't know your pulse whether is very fast. if not very fast, you can connect with digital input with opto-isolated.
